Light, nutritious and perfect for summer, these small plates are big palate-pleasers!
Preparation time: 30 minutes
4 cups cooked chicken breast, shredded
1 cup lettuce, washed
1 cup roasted walnuts
1 cup celery, chopped
2 tablespoons onion, finely chopped
2 cups fresh green California grapes, halved
¾ cup of light mayonnaise
3 tablespoons of apple vinegar
2 tablespoons powdered tarragon
½ teaspoon salt
½ teaspoon pepper
In a medium bowl, stir the mayonnaise with vinegar, tarragon powdered, salt and pepper. Add salt if desired.
Mix the chicken, walnuts, grapes, onion and celery in a salad bowl. Add the mayonnaise dressing and stir.
Serve chicken and grapes salad on small plates with lettuce, or use as sandwich fillings for croissants or rolls.
