2 cups flour
2 teaspoons of baking powder
¾ cup cocoa powder
½ cup of chocolate grated
⅓ cup boiling water
1 cup of butter, room temperature
1 cup sugar
¼ cup of brown sugar
2 teaspoons of pure vanilla extract
5 large eggs
1 cup of black California grapes
Garnish: 10 black California grapes, 1/2 cup chocolate syrup (Ghirardelli or similar quality), chocolate crumble (see below), fresh mint leaves
To prepare the mold: 1 tablespoon of butter + 2 tablespoons of wheat flour


Preheat the oven to 350 ºF.

Grease a 8.5-in round bundt cake pan evenly with butter, and dust with two tablespoons of flour. Turn upside down and tap to discard excess flour.

Melt the grated chocolate in a double boiler. Set aside to cool to room temperature. Chop grapes in half and set aside.

Mix the flour, baking powder and cocoa with a whisk. For an extra soft and fluffy cake, sift the dry mixture.

Place the butter in a large bowl. Beat with the electric mixer at maximum speed for at least 5 minutes until the butter is creamy. Slowly add the brown and white sugars until creamy. Beat in the eggs one by one. Add the sifted flour mixture and melted chocolate. Beat until smooth.

Gently fold in the chopped grapes.

Pour the mixture into the prepared bundt cake pan. Bake at 350F for 50 minutes.

Remove from the oven and insert a toothpick. If batter still appears, bake an additional 10 minutes.

Loosen the edges with a spatula and let sit 5 minutes. Before turning the cake over, level the bottom with a long bread knife. Set aside the remnant for chocolate crumble topping.

Using a rack, flip the cake upside down and let rest another 5 minutes.

Place on a cake platter and garnish with chocolate syrup, fresh California grapes, chocolate crumble and mint leaves.
