This dish is simple and healthy, with a sweet-lemon sauce, pine nuts and fresh herbs. It is prepared quickly, but the secret is to marinate the chicken the night before and bake it with the proper technique.

Ingredients
2 cups of fresh black California Grapes
¼ cup of walnuts
¼ cup of pine nuts
⅓ cup of raisins
2 tbsp olive oil
10 whole walnuts to garnish (Optional)
½ cup of fresh black California grapes to garnish (Optional)
Ingredients for Marinade
3 tablespoons of lemon juice (use half for chicken rub)
1 ½ cup of white wine
1 lemon cut into slices
4 cloves of garlic
1 bay leaf, broken
1 sprig of fresh oregano or two teaspoons of dried oregano
1 sprig of fresh thyme or two teaspoons of dried thyme
Salt and pepper to taste
Directions
Clean the chicken very well (removing innards); rinse under running water and dry with paper towels.
Rub the chicken with a half the lemon juice while preparing the marinade.
For the marinade:
Crush the garlic. Add the bay leaf, oregano, thyme, white wine, remaining lemon juice, salt and pepper. Brush the marinade on and inside the chicken, then store in the refrigerator for about twelve hours, tightly covered.
Baking instructions:
Add a thin layer of oil to a roasting pan or baking sheet (at least 1 inch deep) and preheat the oven to 250° F.
Remove the chicken, tie the two thighs forward and the wings on the back of the chicken using chopsticks or cooking twine. Add liquid and nuts to the bottom of the pan, place the chicken on top and cover with aluminum foil for about ninety minutes.
Remove from the oven and take off the aluminum foil. Brush the chicken with olive oil and add 2 cups of grapes. Place it back in the oven and brown for about 20 more minutes.
Garnish with half a cup of walnuts and 1/2 cup of grapes. Serve with salad.
