Try this traditional breakfast with a twist: pancakes and home-made jam… with fresh California grapes.
Preparation time: 20 minutes
Cooking time: 60 minutes
¾ cup of milk
1 teaspoon vanilla
1 tablespoon butter
4 tablespoons sugar
1 ½ cup of flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon oil or spray oil
Ingredients for Fresh Grape Jam
5 1/2 cups of black California Grapes
1 cup of sugar
1 tablespoon gelatin powder
¼ cup of warm water
2 drops of natural purple food coloring (optional)
For the jam:
Cut grapes in half. Simmer grapes in a medium pan, covered, for approximately 20 minutes. Remove from fire and process the grapes in a blender to a desired consistency.
Place the cooked grapes into a bowl. Stir in sugar with a wooden spoon.
In a separate bowl, dissolve the gelatin powder in warm water and stir. If it does not dissolve, heat 30 seconds in the microwave. Add the gelatin and natural purple food coloring to the jam.
Cook until desired jam consistency is achieved. Makes 1 + 1/2 cups of jam. To store unused jam, pour in a sterilized jar. Serving size is 2 tablespoons.
For the pancakes:
Blend milk, vanilla, egg and butter with handheld beater for about 2 minutes. Add flour, sugar, salt and baking powder. Blend again at medium speed until mixture is smooth.
Heat a nonstick pan over medium-high heat, at least 2 minutes before adding the pancake mixture. Cover surface with oil evenly.
With a ladle or measuring cup, add the pancake mix to the pan.
Immediately after adding the mixture, cover the pan and cook for one to two minutes. When bubbles begin to appear, flip and cook covered for another minute or two. Remove from the pan and stack on a plate, adding a pat of butter to each pancake.
Serve pancakes with your fresh, homemade black California Grape jam!
